Today, Tamara Hoffa, Romance Author at Secret Cravings Publishing has stopped by to share one of her family's favorite weekend recipes. It's a perfect breakfast bake that your kids can even help with. Now, let's get to the recipe that brings a smile to everyone in Tamara's family:
Baked Banana and Blueberry oatmeal
1 cup rolled oats
¼ cup chopped pecans
½ tsp baking powder
¾ tsp ground cinnamon
Pinch of salt
1 cup lowfat milk
¼ cup maple syrup
1 tsp vanilla extract
1 large egg
2 tbls melted butter
2 ripe bananas- sliced
¾ cup fresh blueberries
Preheat oven to 375 grease 11 x 7 pan with spray (Pam). In med bowl toss together oats, ½ of the pecans, baking powder, cinnamon and salt. In a separate bowl whisk together syrup, milk, egg, butter and vanilla. Place sliced bananas and 2/3 of blueberries in the bottom of the greased pan, cover with dry ingredients, drizzle liquid over the dry ingredients evenly, top with remaining blueberries and pecans.
Bake 35-40 mins until top is golden brown.
